Walnut and honey cookie
100g softened unsalted butter
2 tbsp tahini or any other nut butter
90g raw honey
1 egg
1 tsp baking powder
1 tbsp greek yogurt
70g almond meal
80g walnuts, broken into medium pieces
110g plain flour
60g rye flour
Makes roughly 15 cookies
Preheat the oven to 190ºC. Line a baking tray with baking parchment.
In a medium bowl, cream together the butter and tahini until smooth and creamy. Add the honey, mix well before adding the egg. Stir everything together until the batter turns all creamy and smooth. Add the baking powder and greek yogurt followed with the almond meal. Combined all those ingredients before adding the walnut pieces. Finish with the flours and mix to combine.
Using a tablespoon, take a dollop worth of dough and place it on the prepared tray. Leave a little space between each uncooked cookie to give them space to spread a little.
Bake in the preheated oven for roughly 15 to 18 minutes until they take on a golden shade of brown.
