Poached pears in honey and butter
3 pears
5 generous tablespoons of RHC raw honey
1/2 vanilla pod, split down its length
About 750ml of water
30 to 40g butter
Pour the water, 3 tablespoons of honey and vanilla bean in a medium saucepan over low heat. As soon as the honey has melted, stir and add the pear. Partly cover the pan with a lid and simmer for 15 to 20 minutes or until the pears have softened but hold their shape. Top up with water if needed.
Take the pears out of their poaching juice and cut them in eighths.
Place them in a ovenproof dish and keep them aside. Reduce the poaching juice until it becomes thicker and more syrupy.
Add the butter and last 2 tablespoons of honey to the pan and stir until you have a thick syrup.
Turn the oven on 170ºC. Drizzle the syrup over the poached pear slices and bake for 10 to 15 minutes until caramelised.
