Honey, coconut and oat biscuits
Makes roughly 15 biscuits
100g rolled oats
100g spelt flour (or plain flour)
80g wholemeal flour
40g desiccated coconut
75g raw honey
135g softened unsalted butter
1 tsp vanilla extract
40g raisins
Preheat the oven to 180ºC. Line a baking tray with baking parchment.
In a large bowl, combine the oat, flours, coconut. Set aside.
In a separate medium bowl, cream together the butter and honey until smooth and creamy. Add the vanilla extract and stir to combine. Gently add 1/3 of dried ingredients to the honey mix. Combine and proceed with another 1/3. Stop as soon as all the ingredients come together (to avoid over stirring). Finish with the remaining 1/3 and the raisins.
Take a golf ball size of dough and press it inside a cookie cutter onto the prepared baking tray. Proceed with the rest of dough. You should be able to make 15 to 18 biscuits.
Bake in the preheated oven for 12 to 16 minutes until the biscuits turn a lovely shade of golden.
